Since the grocery sales run Wednesday or Thursday through Tuesday or Wednesday around here, that is the cycle I use for menu planning. I usually come up with a rough plan when I see the new grocery ads each Tuesday.
This week’s sales again are pretty underwhelming, so I am going to work with this momentum and continue chipping away at the freezer stash.
Wednesday, 5/29
We had Chipotle-copy burritos with cilantro-lime rice and guacamole. I had avocado, cilantro, and a few limes that needed to be used up.
Out of the freezer: Slow-cooker carnitas.
Thursday, 5/30
Broiled chicken thighs with garlic lemon rosemary rub, whole wheat couscous, steamed asparagus. I am going to try a new-to-me chicken recipe from my America’s Test Kitchen cookbook.
Out of the freezer: Chicken thighs.
Friday, 5/31
We’re going to a friend’s house for a dinner party. All we were instructed to bring was a bottle of Pinot Noir, which I walked over to Binny’s for earlier today. I will enjoy a relatively inexpensive night off from cooking.
Out of the freezer: Maybe something for our daughter, possibly a small portion of macaroni and cheese that she’ll have with some zucchini.
Saturday, 6/1
We’re going to try this pasta with sausage, tomato, and mushrooms. I have a bunch of mushrooms and my husband loves this combination of ingredients. I’ll probably cut the recipe in half and just use a pound of sausage.
Out of the freezer: Italian sausage.
Sunday, 6/2
We are going to a dinner concert thing with some friends, so again dinner will only be for the little one. So I will enjoy a not so inexpensive night off from cooking!
Out of the freezer: Possibly a small portion of something for the kiddo again.
Monday, 6/3
Chicken meatloaf, roasted baby carrots, mashed potatoes. I made this chicken meatloaf once before and it was delicious. Red peppers are a decent price at Caputo’s this week and I have all of the other ingredients.
Out of the freezer: Ground chicken.
Tuesday, 6/4
Kielbasa noodle casserole, string beans. This is a meal I made and froze half (and it was on the menu the week before last but we ended up having something else that night) and this is a day I hope to be at yoga, so I’ll need something quick. The beans are a $.79/lb at Caputo’s this week.
Out of the freezer: Casserole.
